Production Details The base wine receives 6–12 months of cask maturation. Second fermentation occurs in bottle; the technical table specifies 30–36 months in bottle, while the narrative describes up to three years on the lees, followed by hand riddling and disgorgement. Separately, the Falstaff Wine Guide 2024/25 note on the current producer product page marks its tasted bottle “Deg. 11/23”; that bottle-specific notation is not treated as a release-wide disgorgement date.
Tasting Notes Lively fine mousse, gentle pressure, racy and polished freshness, juicy texture, mineral length and smoky notes
Food Pairing Oysters and artichokes
