Production Details The grapes were crushed, macerated for 10–18 hours, basket-pressed and fermented in wooden cask without sedimentation. During three years of maturation, the wine was racked from cask to cask, separated from the lees and clarified without filtration; older vintages were added for harmony. Edition 853 production was 3,156 750 mL bottles. The accompanying producer page describes spontaneous, temperature-uncontrolled fermentation.
Tasting Notes Vinous/Anne Krebiehl MW (May 2025): coconut oil, lemon and citrus oils, with lemon zest and a trace of pith; Falstaff: orange zest, tangerine, blossom honey, lime, mint, fine acidity and a salty, lemony finish.
