Production Details The 25–60-year-old vines were trained using Lenz Moser and Guyot systems at 3,000–4,000 vines/ha and cultivated biodynamically according to respekt-BIODYN. Grapes were selectively hand-picked into 20 kg crates. After 12 hours of maceration, spontaneous fermentation took place in stainless-steel tanks and large wooden barrels at 22–24°C. The wine matured in stainless steel and wood on full lees for two months and then fine lees for three months. Must weight was 19° KMW. The wine was under conversion to organic viticulture, code AT-BIO-402. Recommended serving temperature was 10–12°C, with no decanting.
