Production Details Tirage 2024: vineyards at 250–400 m with a stated yield of 40–50 hl/ha, farmed biodynamically and organically. Must was clarified by sedimentation for 36–48 hours. The first fermentation was spontaneous at 20–22°C with malolactic conversion. Maturation comprised six months on full lees and a further two months on fine lees in stainless steel after racking and April assemblage. Second-fermentation bottling occurred on 30 May and 18 June 2024; first disgorgement was December 2025 after at least 18 months on bottle lees. This release had a dosage of 2 g/L. Recommended serving temperature is 8–10°C.
Certifications Lacon Institut; certification code AT-BIO-402
