Production Details Dry Solera wine assembled from multiple years. Vinocentral reports residual sugar below 3.0 g/L; the bounded value is retained here rather than emitted as an exact residual_sugar_gl claim. Vojacek describes biodynamic farming, spontaneous fermentation, long maceration, maturation in large used wooden casks, no fining or filtration and only a small sulfite addition. Vinocentral’s detailed tasting note on the same product page explicitly belongs to S21 and is not applied to S22.

Production Details S21 was hand-harvested, with part of the fruit macerated with stems in open vats and spontaneously fermented. It matured in used wooden barrels ranging from 500 to 4,000 L, then was bottled without fining or filtration and with reduced sulphuring.
Tasting Notes Vinocentral S21 note: cherries, redcurrant, blackberry, elderberry and beetroot with pepper and light tobacco; juicy, silky tannins and fresh acidity. TWDC 2021 note: red berries, chocolate, roasted almond, cherry, redcurrant and tart raspberry.
