Production Details Dry rosé Pet Nat from handpicked, manually sorted fruit on a hillside. The Pinot Noir component underwent carbonic mash fermentation with 100% stems in an open vat for five days; the record also marks this step “50%.” Fermentation was spontaneous in steel tank for three days. No sulfur was added, although sulfites are declared as an allergen. The wine was matured in bottle, manually riddled and warm-disgorged by hand; the disgorgement section records five months of storage. Recommended serving temperature is 10–12°C, and stated aging potential is medium, approximately four years.
