Production Details The grapes were manually sorted. The 90% destemmed portion underwent semi-carbonic fermentation for five days in steel, while 10% whole clusters underwent carbonic fermentation for five days in steel. The wine matured for six months: 80% in 3,500-L large used wooden barrels and 20% in 1,000-L used oak barrels. No sulfur was added. The record also gives vine age as 13–43 years, planting density as 4,500–6,000 vines/ha, yield as 3,000–6,000 L/ha, elevation as 135–220 m, serving temperature as 14–16°C and medium aging potential of ten years.
