Production Details The grapes received 3–5 days of skin contact; half the bunches were lightly foot-trodden and half remained whole. They were pressed during fermentation, finished fermenting in Fuder, amphorae and concrete eggs, and remained on gross lees until May before bottling without added sulfur dioxide. The accompanying trade description also specifies spontaneous fermentation in separate lots and partial direct pressing.
Tasting Notes Galloni: golden colour; dried orange peel, lemon pith, white pepper and chalk; light-bodied, fresh, linear and bone-dry, with lemon and dried-orange-peel notes on the finish
