After spontaneous fermentation, 80% was fermented semi-carbonically without stems and 20% carbonically with 100% stems, both for five days in 1,000 L amphorae. The wine completed malolactic fermentation, matured four months in 1,000 L amphorae followed by ten months in a 1,200 L large wooden barrel, received no added sulfur, and was bottled unfiltered.
