Production Details Hand-picked grapes were manually sorted. The wine underwent spontaneous malolactic fermentation and was divided equally between two 1,000 L amphora lots: a semi-carbonic portion with 50% stems for 4 days and a carbonic portion with 100% stems for 14 days. Maturation comprised 50% in 1,000 L amphora for 8 months and 50% in a 1,000 L large wooden barrel for 6 months. No sulfur was added. The vineyard lies at 170–220 m and is planted at 5,000 vines/ha. Finished-wine data lists “Acid” at 6.7 g/L without identifying its chemical-equivalent basis. Recommended serving temperature is 15–17°C; stated aging potential is high at 15 years.
