Production Details Lot L-PARA22: hand-picked grapes were manually sorted. The source reports vineyards at 135–220 m. After three days of skin contact, spontaneous fermentation occurred in an open vat and used wooden fermentation vessel for 5–20 days at 15–25°C. Maturation lasted eight months, split equally between 1,000 L and 3,500 L used large wooden barrels. No sulfur was added, although sulfites are declared. The record reports “Acid” at 5.6 g/L without specifying the analytical basis.
