Production Details The three varieties were co-fermented with indigenous yeast in concrete eggs for 15 days at 18–20°C, without maceration, and underwent malolactic fermentation. The wine then matured biologically under flor for 9 months in 500 L French-oak barrels ranging from first through fourth use, followed by 4 months in stainless steel and 8 months in bottle. The vineyards comprise 1.5 ha Chardonnay, 3 ha Chenin Blanc and 2.75 ha Sauvignon Blanc; reported grape yields are respectively 120, 150 and 120 qq/ha. Chardonnay and Sauvignon Blanc are drip-irrigated and trellised, while Chenin Blanc is flood-irrigated and trained on parral. The sheet describes the viticulture as ecological and reports acidity of 5.62 g/L without specifying its acid-equivalent basis, plus sulfites of 68 mg/L.
