Production Details Fruit came from the Mainqué vineyard planted in 1932. Grapes were picked in the early morning, chilled and destemmed by hand, then placed in small round cement tanks for an approximately five-day cold maceration. Fermentation on natural yeasts lasted about three weeks with plunging once or twice daily. The wine was transferred by gravity to approximately 50% new and 50% one-wine French-oak barrels; natural malolactic fermentation lasted about two months on primary lees, followed by one racking and 11 months' barrel maturation. It was blended on 2007-03-06 and bottled unfined and unfiltered on 2007-03-09.
