Production Details On-vine dehydration preceded a mid-to-late-June harvest. After destemming and gentle pressing, the must fermented in small tanks for 16 days at 14°C with selected yeasts adapted to high sugar and low temperatures; the sheet additionally gives a 12–14°C operating range. Fermentation was stopped by cold once the desired sugar–alcohol balance was achieved. The wine aged for 12 months in French oak barrels.

Production Details Hand-harvested grapes were allowed to dehydrate on the vine before a mid-to-late-June harvest. After destemming and soft crushing, fermentation proceeded at 53–57°F with selected yeasts adapted to high sugar. After eight days, 15% of the wine was transferred to first-use French oak; fermentation was stopped by cold at the desired sugar–alcohol balance. That 15% portion aged for three months in first-use French oak barrels.
