Production Details The five vineyard lots were harvested separately. Whole berries were hand-loaded into small fermentation bins and 225–500 L barrels and each lot was vinified individually. The producer reports 10–20 days of fermentation, 10–22 days total maceration, wild yeast, full malolactic fermentation, and 12–18 months in first-, second- and third-use barrels. Winebow instead specifies 10–18 days alcoholic fermentation at 82°F with manual punch-downs, 18 months in 225 L French-oak barriques (70% new), followed by 24 months of bottle aging. Winebow also reports 2,200 vines/acre, 1.2 tons/acre, residual sugar below 2 g/L, and unspecified-basis acidity of 6.15 g/L.
