Production Details Hand-harvested fruit underwent double selection of bunches and berries, four days of cold maceration, and delestage, pump-over and punch-down three times daily. Extended maceration lasted 30 days at a maximum of 31°C. The wine was preserved on its lees with bâtonnage and matured for 16 months in French oak barrels, 80% new and 20% second-use.
