Production Details The grapes were hand harvested towards the end of January 2021 and gently whole bunch pressed to recover a maximum of only 500 litres per ton. Fermentation of the Chardonnay and the Pinot Noir occurred in old French oak barrels. A reserve portion of Chardonnay spent 12 months in old French barrels. The wine spent a minimum of 42 months on the lees to develop optimum complexity.

Nose: roasted almonds, marzipan, strawberry, cherry compote, zesty citrus nuances
Palate: dry, rich, full, soft toasty creaminess, beautiful palate weight
Food Pairing grilled game fish with rich mayo aioli, roasted quail with Champagne risotto and wild mushrooms
