Production Details Only best-quality free-run juice used. Approximately 30% wild yeast-fermented then aged in predominantly older French oak barrels, with some French Acacia barrels for complexity and depth. Remainder fermented in stainless steel tanks highlighting primary fruit character. Hand-harvested from selected Chenin Blanc vineyards in cool, early morning hours. Vineyards sustainably fertilized with natural compost produced on farm.
