Production Details The old planting material is prone to very tight bunches. Intense vineyard sorting is required when picking, only perfect bunches were picked and processed. Grapes are cooled overnight and whole bunch pressed in an oxidative manner. Natural fermentation and malolactic fermentation takes place in older 600L Stockinger barrels where the wine ages for a further 10 months before bottling.
