Production Details 100% Fernao Pires. Processus says the vineyard is nearly 40 years old and tended by a farmer with four generations of experience. Grapes are destemmed and crushed into an open-top fermenter, cold-soaked for 48 hours, then moved outside to warm under the African sun to initiate spontaneous fermentation. Two-thirds of the way through fermentation, the juice is drawn off the skins and transferred to oak; the skins are pressed and a small amount of press wine is added back to the same barrel.
