Production Details The grapes were harvested at around 22.1 brix on the 8th, picked into small grape crates, chilled overnight, whole bunch pressed the next day, then settled overnight before fermentation in 400L old French oak barrels. Fermentation started naturally and the wine matured sur lie for 10 months with regular lees stirring.
