Production Details 30% whole bunch fermented in large 5000 litre vats with gentle pump-overs twice a day. Free run wine drained and pressed in traditional wooden hydraulic basket press. Wine racked into 225L and 228L barrels where malolactic fermentation took place and wine aged for 10 months. Decanting recommended.
