Production Details 50% whole bunch fermentation in 5,000 liter wooden fermenter with gentle pigeage. 30-day extended maceration on skins. Pressed in traditional basket press. Matured in 500-700 liter barrels (35% new oak) for 11 months. Dry-farmed on steep shale slopes. Long hang-time on vine. Dry wine with food-friendly acidity.
