Production Details Single-block Stellenbosch Chardonnay planted in 2007 on Richter 99 rootstocks. Cooling breezes from False Bay support slow ripening. Grapes were handpicked at optimum ripeness, pressed, and the juice clarified before fermentation started in stainless steel tanks. After roughly a quarter of fermentation, the wine was transferred to French oak barrels to complete fermentation, then spent 8 months in barrel with lees stirring every 3 to 4 weeks. A strict barrel selection was followed by blending, stabilisation, and settling before bottling.
