Production Details Flagstone describes this as a wine that respects its 350-year-old winemaking heritage while celebrating nature. Grapes are hand-picked in the cool of early morning. Fermentation takes place in open top fermenters, followed by 16-18 months in oak. The technical sheet states 100% barrel fermented in 55% American and 33% French oak, with 30% new oak. The wine is produced without animal products using plant-derived proteins.
