Production Details 100% Sémillon from La Colline vineyard in Franschhoek, planted in 1936 on quartz rich sandstone and granite soil between 310-350m elevation. Multiple Sémillon variants (Blanc, Gris, Rose, Mauve) harvested together, sorted and whole bunch pressed. Juice lightly decanted without additions. Spontaneous fermentation in 7 year old barrels lasting approximately 1 month. Aged on primary lees for 18 months in old barrels. Bottled without fining or filtration.
