Production Details 100% Chenin Blanc from parcels in Swartland (Malmesbury), Piekenierskloof, Bottelary, Polkadraai, Paardeberg, and Tygerberg. Mixture of young and older vines aged 5-40 years. Grapes picked early morning with sorting in the vineyard. Whole bunch pressed, very lightly settled with no additives. Wild fermentation in old barrels of various sizes lasting approximately two months. Kept on lees for 12 months, then rested in tank on fine lees without fining for 6 months prior to bottling. No yeasts, no enzymes, no acidification, no sulphur before ferment, no blocking malo, no new barrels, no fining.
