Production Details Harvested at optimal ripeness, destemmed, skin contact for a few hours. Cold fermented with reductive processing. 65% barrel fermented (25% new oak, 25% Foudre, 10% ceramic eggs), 35% stainless steel tanks. Left on lees for full barrel aging period (8 months total maturation). Production: 27 barrels.
