Production Details Hand-picked grapes were cooled overnight, hand-sorted, destemmed, and gently crushed. Five days of cold maceration preceded a three-week fermentation with regular pump-overs for soft tannins, increased flavour, and deeper colour. Drinking well now but can be enjoyed over the next 8 years if cellared correctly.
