Production Details Grapes cooled before processing. Whole bunch pressing (3 hours with settling). Juice transferred to two old foudres for fermentation. Wine left on lees for entire 12 months. 60mg/L SO2 added two weeks prior to bottling. Bottled from lees. May show reduction on release; aeration recommended.
