Production Details Grapes came from two sustainably farmed 46+ year-old dry-land bush-vine Chenin parcels in the Paardeberg. The grapes were chilled in a cold room, pressed whole-bunch, settled overnight, then fermented with indigenous yeasts in tank and a few older French oak barrels for approximately six weeks before blending, final settling, and bottling.
