Production Details Single-vineyard old vine Chenin Blanc from the historic Lammershoek property in the Southern Swartland on the Paardeberg. Harvested in the morning, chilled overnight in a cold room, whole-bunch pressed the next day, settled overnight without enzymes, then racked into old 300L barrels for natural fermentation. The wine spent 10 months in barrel before blending and bottling.
