Production Details Dryland bushvines planted on the highest south-east facing granite slopes on the farm. Grapes were hand harvested, destalked only with no crushing, then cold macerated before fermentation in open fermenters. Fermentation ran at 24-26°C for 5-7 days, after which the wine was taken to barrels for malolactic fermentation. After MLF, the wine spent 12 months in older 225 litre French oak barrels until bottling.
