Production Details Vineyard Selection from selected bush vine vineyards in Stellenbosch, average age 35 years on decomposed granite soils. Handpicked early morning with 24-hour extended skin contact. Only free-run juice used, settled 1 day. 95% barrel fermented (no new barrels), also fermented in concrete eggs and terracotta amphora. 7 months aging on primary lees before racking and bottling.
