Three or four pump-overs per day and then pressed to undergo malolactic fermentation in the tank. After completion the wine was racked in French oak barrels; 18% new, 25% second fill, 17% third fill, and 40% older oak was used for a period of 12 months before blending and a light filtration before bottling in August 2022.
