Production Details Each component harvested separately, de-stemmed, and sorted into tank. Wines spent 6-21 days on skins depending on tannin structure. Three or four pump-overs per day then pressed to undergo malolactic fermentation in tank. After completion, wine racked in French oak barrels: 18% new, 25% second fill, 17% third fill, and 40% older oak for 12 months before blending and light filtration before bottling in August 2022.
