Production Details Four specifically selected Stellenbosch vineyard sites: two on Helderberg (freshness and acidity), one in Vlottenburg on South-Easterly slope (citrus lift), one from Warwick on warmer West-facing slope of Simonsberg (textural and structural elements). All four vineyards picked separately at different ripeness levels. Whole bunch pressed and juice allowed to clear naturally. Fermented in 228L Burgundian French oak barrels: 33% new oak, 19% second fill, 17% third fill, 21% fourth fill, 10% neutral oak. Barrels rolled once monthly for 11 months total aging. Light filtration prior to bottling in February 2023. Released July 2023.
