Production Details Pinot Noir grapes selected from two vineyard blocks in Stellenbosch and Robertson were harvested in the cool, early morning, ensuring a sugar content of 18.5° – 19.5 °Balling for optimal freshness. The grapes were whole bunch pressed with minimal rotations and interference to preserve quality. The juice was fermented in temperature-controlled stainless-steel tanks. Only the finest tanks were chosen for blending. Secondary fermentation took place in the bottle with extended aging on the lees for ±14 months prior to disgorging.
