Production Details Single vineyard (0.5 hectares) at Rustenhof Farm, Firgrove, in the Lower Helderberg. Bush vines planted in 1988 by Anton and Pieter (Snr.) Bredell, around 4 km from False Bay. Crop approximately 2.2 kg per vine at about 3,000 vines per hectare. All grapes hand-picked in small lugboxes. Separate fermentations with naturally occurring vineyard yeast: 70% with stems intact, crushed and foot-trodden, the remainder destemmed with some extended post-ferment skin time. No punch-downs. Submerged cap and slow extraction. Spontaneous fermentation lasted almost 2 weeks. Basket-pressed directly to barrel and aged on lees for 10 months in old (4th fill) French oak barrels.
