Production Details Single vineyard (0.5 hectares) on Seelug Farm at Firgrove, Lower Helderberg, registered in 2019. Bush vines planted 1999 by Koos Bredell at 3,650 vines per hectare in treinspoor (double row) fashion. Closest to ocean in WO Stellenbosch. Dry-farmed. Crop approximately 1.3 kg per vine. All grapes hand-picked in small lugboxes. Blend of two separate natural fermentations with indigenous yeast from vineyard. First fermentation 70% whole stems intact, crushed and foot-trotted. Second fermentation 40% whole clusters, rest destemmed. Submerged cap, slow extraction, no punch downs. Spontaneous fermentation lasted 2+ weeks with 1 week post-fermentation. Basket-pressed directly to barrel. Aged on lees for 11 months in old (5th fill) French oak 400-litre barrels. No additives except trace amounts of sulfites. Bottled without fining or filtration. 2019 vintage experienced cooler ripening with reduced water stress from previous drought, resulting in smaller berries with high acidity and early flavor concentration.
