Production Details Simonsig has been producing Cabernet Sauvignon since 1976. The 2019 vintage was challenging due to prolonged drought and water restrictions. The vineyard and cellar teams adapted practices to decrease the effect of water shortage. Dry, warm weather resulted in smaller berries with great intensity. The Cabernet Sauvignon delivered wines with an abundance of fruit and beautiful balance.
Tasting Notes
Nose: wild blackberry, cranberry, violets, cocoa, cured meat savouriness
Palate: creamy strawberry, ripe plum, tilled earth, fynbos
Food Pairing braised short rib with turnips and carrot purée, deboned lamb rib with charred cauliflower and jus, flavourful and heartier pastas
