Production Details Hand-picked grapes were destemmed without crushing and fermented in open-top fermenters. Early fermentation used three punch-downs and pump-overs daily, reduced to once daily near the end. The wine stayed on skins for an additional 2-3 weeks before pressing. After malolactic fermentation it matured in French oak barrels, 20% new, for 12 months before blending, followed by 6 more months in older oak barrels. Drinking beautifully on release and expected to gain complexity for at least 8 more years.
