Production Details Different sections were picked and fermented separately in open-top fermenters. A combination of four punch-downs and pump-overs were done daily for extraction, and the wine was left on the skins for two to four weeks after fermentation. The individual components were aged in barrel for 12 months before a rigorous barrel selection and blending process. About 10% whole-bunch fermented 2020 Shiraz was blended in for freshness and grip, after which the wine spent a further 12 months in 300-litre French oak barrels, 60% new, before bottling. Saxenburg describes this as the smallest bottling of SSS ever.
