Production Details Handpicked fruit came from selected parcels across three different blocks. The wine was fermented in open-top tanks using a combination of punch-downs and pump-overs for extraction, then left on the skins for 28 days before pressing into barrel. Malolactic fermentation took place in barrel and the wine was kept without SO2 for 3 months. SO2 was then added and the wine remained in 300-litre French oak barrels, 60% new, without racking, for a total of 24 months.
