Production Details The 2019 vintage was challenging due to previous drought, leading to below-average yields. A warm snap in June and a wet Spring, coupled with a wetter than average Summer harvesting season, made 2019 a challenge. Late harvest thinning or multiple harvests were required to achieve uniformity. Early and mid-season ripening varieties performed well, achieving flavour ripeness at lower alcohol levels. Late ripening varieties required patience and extended time on the vines, again achieving lower alcohols overall, but creating ripe, structured wines. The wine is crushed and de-stemmed, then pumped over during ferment. Fermentation takes place in stainless steel vessels with cultured active dry wine yeast. Extended maceration is 0 to 7 days. The wine is 100% aged for 15 months in oak, with 10% new and 90% 2nd, 3rd and 4th fill French oak barriques (225L). Fining agents used are Egg Whites (Albumen).
