Production Details Grapes hand-harvested and chilled overnight in cold containers. Hand sorted and whole-bunch pressed. Spontaneous fermentation in 300L French oak barrels (85% new, 15% seasoned casks). Aged 12 months on gross lees without SO2 additions. Racked into stainless steel tank for further 4 months aging prior to bottling.
