Production Details 100% Sauvignon Blanc. Hand sorted bunches ensuring only best fruit used. Whole-bunch pressed. Spontaneous fermentation in 300L French oak casks (95% new oak, 5% second fill). Aged 12 months in new French Barrique on gross lees. Racked into stainless steel tank for further 4 months aging prior to bottling.
