Production Details Official 2023 product page states that the old unirrigated bush vines are rooted in unusual white clay at the foot of the Helderberg Mountain. Grapes were hand picked into 20kg lug boxes and hand sorted. A large percentage of bunches were destemmed but not crushed, with about 50% of berries transferred to an open-top oak foudre for partial carbonic fermentation, then lightly basket pressed and moved by gravity to barrel. Maturation used only large-format 500L and 600L barrels, with no new oak.
