Production Details Crafted from vineyards in Polkadraai Hills, Stellenbosch. Grapes were hand sorted three times, crushed, and left to cold soak on the skins for five days. After fermentation at 28C, the grapes were basket pressed and underwent malolactic fermentation in stainless steel tanks. The wine was matured in 300 litre French oak barrels for 14 months using only neutral oak barrels. The producer recommends drinking it now or cellaring it for another 2 to 5 years.
