Production Details Dryland Stellenbosch Mountain fruit was hand-picked on February 26, 2021 and transported in bins to the Pilgrim cellar. The producer describes a carefully oxygen-managed fermentation with precise extraction and some whole-bunch fermentation in pursuit of a balanced, spice-driven style. Maturation lasted 18 months in 50% neutral 300L barrels and 50% third-fill 228L barrels with American heads. The wine was made as unobtrusively as possible and may throw natural sediment or crystals.
