Production Details Vertically trellised on hedge systems. Hand and machine harvested late January to mid-February (19.8–22.5° Balling). 4-hour skin contact in press. Clarified by flotation. Fermented 3–4 weeks in temperature-controlled stainless-steel tanks at 14–16°C using selected dry yeasts. Aged on lees for 6 weeks.
